Empellón Cocina's Fat-Washed Mezcal

Ingredients
  • Habanero peppers (for tincture)2 medium
  • Ilegal Joven mezcal (for tincture)2 oz
  • Pork rib fat–infused Ilegal Joven mezcal2 oz
  • Marie Brizard white chocolate liqueur3/4 oz
  • Coffee liqueur1/2 oz
  • Habanero tincture (from above)5 drops
Instructions
  1. 1Slice 2 medium habanero peppers.
  2. 2Cover with 2 oz Ilegal Joven mezcal.
  3. 3Steep overnight or until desired heat.
  4. 4Strain.
  5. 5Combine 2 oz pork rib fat–infused Ilegal Joven mezcal and 3/4 oz Marie Brizard white chocolate liqueur in a mixing glass with ice.
  6. 6Stir about 45 seconds.
  7. 7Strain into a chilled coupe.
  8. 8Sink 1/2 oz coffee liqueur down the inside of the glass over a spoon.

Pro Tip

  • Chill the coupe.
  • Garnish the surface with 5 drops of the habanero tincture.
