🥃Ingredients

  • Teeling Small Batch Irish whiskey250 ml (makes 5 cocktails)
  • Pear cognac (e.g., Xanté)37.5 ml (for 5 cocktails)
  • Cinnamon & clove syrup87.5 ml (for 5 cocktails)
  • Almond foamas needed to fill 1/3 of each glass
  • Brown sugar (for syrup)100 g
  • Water (for syrup)100 ml
  • Cinnamon stick (for syrup)1
  • Cloves (for syrup)2–3
  • Star anise (for syrup)1
  • Pinch of salt (for syrup)pinch
  • Almond milk (for foam)1 cup
  • Lemon juice (for foam)1/2 cup
  • Disaronno amaretto (for foam)2 shots
  • Water (for foam)50 ml
  • Gelatin sheet (for foam)1

👨‍🍳Instructions

  1. Combine almond milk, lemon juice, Disaronno, water, and 1 gelatin sheet in a cream whipper.
  2. Charge the cream whipper.
  3. Charge the cream whipper again.
  4. Shake well.
  5. Chill for a few hours.
  6. Simmer brown sugar with water, a cinnamon stick, cloves, star anise, and a pinch of salt until dissolved and aromatic.
  7. Cool.
  8. Strain.
  9. Add whiskey, pear cognac, and cinnamon & clove syrup to a mixing glass.
  10. Stir with ice for about 60 seconds.
  11. Fill a chilled martini glass one-third full with almond foam.
  12. Strain the stirred cocktail underneath the foam.

Pro tip

  • Chill glass.
  • Garnish with caramelised pear, if desired.
