Ingredients
  • Granulated sugar1/4 cup (for ginger simple syrup)
  • Water1/2 cup (for ginger simple syrup)
  • Fresh ginger, peeled and very thinly sliced3-inch piece (for ginger simple syrup)
  • Iceas needed
  • Bourbon2 oz
  • Lime juicejuice of 1 lime
  • Ginger simple syrup2 Tbsp (from above)
  • Egg white1 (optional)
  • Fresh ginger1/2-inch piece, for rim
  • Lime wedgegarnish
Instructions
  1. 1Combine sugar, water, and sliced ginger in a small saucepan over medium heat.
  2. 2Bring to a boil.
  3. 3Stir to dissolve sugar.
  4. 4Boil for 6 minutes.
  5. 5Remove from heat.
  6. 6Let cool to room temperature.
  7. 7Strain, pressing on solids.
  8. 8Discard ginger.
  9. 9Fill a cocktail shaker with ice.
  10. 10Add bourbon, lime juice, ginger simple syrup, and egg white.
  11. 11Shake until well chilled.
  12. 12Rim a glass with a cut piece of ginger.
  13. 13Strain the drink into the glass.
  14. 14Garnish with a lime wedge and a maraschino cherry.
