  • Port wine1 oz (0.5 jigger)
  • Lemon juiceJuice of 0.5 lemon
  • Sugar (superfine or barspoon)1 barspoon
  • Egg white1 (from 1 egg)
  • Soda waterTop

👨‍🍳Instructions

  1. Shake rum, port, lemon juice, sugar, and egg white with ice.
  2. Strain back into the shaker.
  3. Dry-shake to emulsify.
  4. Pour into a highball/fizz glass.
  5. Top with soda water as you pour.
  6. Let the head settle.
  7. Top up with the remaining mixture.
  8. Top with more soda water.
