Ingredients
  • Jamaican rum1 oz (0.5 jigger)
  • Port wine1 oz (0.5 jigger)
  • Lemon juiceJuice of 0.5 lemon
  • Sugar (superfine or barspoon)1 barspoon
  • Egg white1 (from 1 egg)
  • Soda waterTop
Instructions
  1. 1Shake rum, port, lemon juice, sugar, and egg white with ice.
  2. 2Strain back into the shaker.
  3. 3Dry-shake to emulsify.
  4. 4Pour into a highball/fizz glass.
  5. 5Top with soda water as you pour.
  6. 6Let the head settle.
  7. 7Top up with the remaining mixture.
  8. 8Top with more soda water.

Pro Tip

  • Use a chilled glass.
  • No ice in the glass.
