Ingredients
- Water1500 ml
- Ginger, grilled and bruised150 g
- Palm sugar, shaved50 g
- Lemongrass, bruised2 stalks
- Kaffir lime leaves5 leaves
- Cinnamon4 cm stick
- Cloves5 whole
- Sappan wood (secang)10 g
- Pandan leaves3 leaves
- Granulated sugar150 g
- Salt1/8 tsp
- Nutmeg1/4 whole
Instructions
- 1Bring water to a simmer.
- 2Add ginger, palm sugar, lemongrass, kaffir lime leaves, cinnamon, cloves, sappan wood, and pandan.
- 3Simmer over low heat until fragrant and reddish.
- 4Strain.
- 5Return the liquid to the pot.
- 6Add granulated sugar, salt, and nutmeg.
- 7Heat until the sugar dissolves.
Pro Tip
- Serve hot.
- Or chill and pour over ice.
