Ingredients
  • Water1500 ml
  • Ginger, grilled and bruised150 g
  • Palm sugar, shaved50 g
  • Lemongrass, bruised2 stalks
  • Kaffir lime leaves5 leaves
  • Cinnamon4 cm stick
  • Cloves5 whole
  • Sappan wood (secang)10 g
  • Pandan leaves3 leaves
  • Granulated sugar150 g
  • Salt1/8 tsp
  • Nutmeg1/4 whole
Instructions
  1. 1Bring water to a simmer.
  2. 2Add ginger, palm sugar, lemongrass, kaffir lime leaves, cinnamon, cloves, sappan wood, and pandan.
  3. 3Simmer over low heat until fragrant and reddish.
  4. 4Strain.
  5. 5Return the liquid to the pot.
  6. 6Add granulated sugar, salt, and nutmeg.
  7. 7Heat until the sugar dissolves.
