- English hothouse cucumber1 (use for muddling and ribbons)
- Makrut (kaffir) lime leaves or lime zest strips5 leaves or four 2-inch strips
- Lemon wheels4, divided
- Gin4 oz (for 2 servings)
- Fresh lime juice1 oz
- Raw sugar2 tsp
- Club sodato top
👨🍳Instructions
- Peel 4 long cucumber ribbons for garnish.
- Set aside the cucumber ribbons.
- Cut a 4-inch piece from the remaining cucumber.
- Coarsely chop the cucumber piece.
- Add the chopped cucumber, makrut lime leaves (or lime zest strips), raw sugar, and 2 lemon wheels to a cocktail shaker.
- Muddle until well crushed.
- Add the gin and fresh lime juice to the shaker.
- Fill the shaker with ice.
- Shake until very cold (about 20 seconds).
- Fine-strain into two ice-filled rocks glasses.
- Top each glass with club soda.
- Gently stir.
- Garnish each glass with two reserved cucumber ribbons and the remaining lemon wheels.
