Ingredients
  • English hothouse cucumber1 (use for muddling and ribbons)
  • Makrut (kaffir) lime leaves or lime zest strips5 leaves or four 2-inch strips
  • Lemon wheels4, divided
  • Gin4 oz (for 2 servings)
  • Fresh lime juice1 oz
  • Raw sugar2 tsp
  • Club sodato top
Instructions
  1. 1Peel 4 long cucumber ribbons for garnish.
  2. 2Set aside the cucumber ribbons.
  3. 3Cut a 4-inch piece from the remaining cucumber.
  4. 4Coarsely chop the cucumber piece.
  5. 5Add the chopped cucumber, makrut lime leaves (or lime zest strips), raw sugar, and 2 lemon wheels to a cocktail shaker.
  6. 6Muddle until well crushed.
  7. 7Add the gin and fresh lime juice to the shaker.
  8. 8Fill the shaker with ice.
  9. 9Shake until very cold (about 20 seconds).
  10. 10Fine-strain into two ice-filled rocks glasses.
  11. 11Top each glass with club soda.
  12. 12Gently stir.
  13. 13Garnish each glass with two reserved cucumber ribbons and the remaining lemon wheels.
