Ingredients
  • Sugar (for makrut lime syrup)1/2 cup
  • Water (for makrut lime syrup)1/2 cup
  • Makrut lime leaves16 leaves
  • Ripe mango, roughly chopped8 oz
  • Plain yogurt8 oz
  • Buttermilk2 oz
  • White rum2 oz
  • Makrut lime syrup2 oz
  • Lime juice1/2 oz
  • Kosher saltPinch
  • Toasted pistachios, roughly chopped (garnish)As needed
Instructions
  1. 1Combine 1/2 cup sugar, 1/2 cup water, and 16 makrut lime leaves in a small saucepan.
  2. 2Bring to a boil.
  3. 3Remove from heat.
  4. 4Let steep as it cools to room temperature.
  5. 5Strain and reserve.
  6. 6Purée 8 oz chopped ripe mango in a blender.
  7. 7Add 8 oz plain yogurt, 2 oz buttermilk, 2 oz white rum, 2 oz makrut lime syrup, 1/2 oz lime juice, and a pinch of kosher salt.
  8. 8Blend until smooth.

Pro Tip

  • Serve cold in a Collins glass.
  • Garnish with chopped toasted pistachios and a dusting of ground green cardamom.
