Ingredients
  • Kokum (aamsol)6–8 pieces
  • Grated coconut1 cup
  • Hot water1 cup (plus additional water used during extractions as directed)
  • Garlic (or ginger)2 cloves garlic or 1 tsp ginger
  • Green chilies1–2
  • Asafoetida (hing)Pinch
  • Rock saltTo taste
Instructions
  1. 1Soak 6–8 kokum in about 3/4 cup water with a pinch of hing and salt.
  2. 2Set aside for 3–4 hours.
  3. 3Grind 1 cup grated coconut with the garlic (or ginger) and green chilies, adding a little water, to a thick paste.
  4. 4Squeeze out the coconut milk and reserve.
  5. 5Add about 3/4 cup more water to the coconut solids.
  6. 6Pulse briefly.
  7. 7Extract milk again.
  8. 8Repeat 2–3 times until most milk is extracted.
  9. 9Discard the kokum solids.
  10. 10Combine the kokum water with the extracted coconut milk.
  11. 11Mix until creamy pink.
  12. 12Adjust salt to taste.
  13. 13Let the drink rest for about 1 hour.

  • Garnish with chopped coriander.
  • Serve chilled.
