🥃Ingredients

  • Kokum (aamsol)6–8 pieces

👨‍🍳Instructions

  1. Soak 6–8 kokum in about 3/4 cup water with a pinch of hing and salt.
  2. Set aside for 3–4 hours.
  3. Grind 1 cup grated coconut with the garlic (or ginger) and green chilies, adding a little water, to a thick paste.
  4. Squeeze out the coconut milk and reserve.
  5. Add about 3/4 cup more water to the coconut solids.
  6. Pulse briefly.
  7. Extract milk again.
  8. Repeat 2–3 times until most milk is extracted.
  9. Discard the kokum solids.
  10. Combine the kokum water with the extracted coconut milk.
  11. Mix until creamy pink.
  12. Adjust salt to taste.
  13. Let the drink rest for about 1 hour.
