- Palm sugar (or coconut sugar), more to taste4 Tbsp

- Cardamom seeds1 tsp
- Fresh lemongrass, lightly bruised3 stalks
- Pandan leaves, knotted2 leaves
- Sweetened condensed milk (optional)to taste
Instructions
- 1Combine the water, ginger, cinnamon, cloves, cardamom, lemongrass, and pandan in a medium saucepan.
- 2Bring to a boil.
- 3Reduce heat.
- 4Simmer until aromatic, about 20 minutes.
- 5Add palm sugar.
- 6Stir to dissolve.
- 7Cover.
- 8Let steep about 15 minutes.
- 9Strain into serving glasses.
- 10Add a little sweetened condensed milk.
