Ingredients
  • Rye whiskey (Sazerac Rye preferred)1.5 oz
  • Sugar cube1 cube
  • Peychaud’s Bitters3 dashes
  • Herbsaint (for rinse)0.25 oz
  • Lemon peel1 twist
Instructions
  1. 1Pack an Old-Fashioned glass with ice to chill.
  2. 2Place a sugar cube in a second Old-Fashioned glass.
  3. 3Add Peychaud’s Bitters.
  4. 4Crush to dissolve the sugar.
  5. 5Add rye whiskey.
  6. 6Add ice.
  7. 7Stir to chill.
  8. 8Discard the ice from the first glass.
  9. 9Add Herbsaint to coat the inside of the first glass.
  10. 10Discard the excess Herbsaint.
  11. 11Strain the whiskey–bitters–sugar mixture into the Herbsaint-rinsed glass.
  12. 12Express a lemon peel over the drink.
  13. 13Garnish with the peel.
