🥃Ingredients

  • Limes, quartered4
  • Fresh basil or mint leaves3/4 cup
  • White rum8 oz (1 cup)
  • Dark rum2 oz (1/4 cup)
  • Pineapple chunks, fresh or frozen3 1/2 cups
  • Canned coconut cream (unsweetened)1 cup
  • Lime zest (for rim)zest of 1 lime
  • Granulated sugar (for rim)2 tbsp
  • Flaky sea salt (optional, for rim)pinch

👨‍🍳Instructions

  1. Combine lime zest, sugar, and a pinch of flaky sea salt on a shallow plate.
  2. Rim the glasses with the lime sugar.
  3. Muddle lime juice with basil (or mint) and 1–2 tbsp lime sugar in a shaker or jar.
  4. Add white rum.
  5. Add dark rum.
  6. Fill the shaker with ice.
  7. Shake to combine.
  8. Strain into a blender.
  9. Add pineapple chunks.
  10. Add coconut cream.
  11. Blend until smooth.
  12. Add about 3 cups of ice.
  13. Blend until slushy.
  14. Pour into the prepared glasses.

  • Optional: finish with a sprinkle of lime sugar and fresh basil.
  • Serve immediately.
