Grass Jelly Drink (Liang Fen Bing)

Ingredients
  • Dark brown sugar1 cup
  • Pandan leaf, tied into a knot1 leaf
  • Grass jelly (about one 19-oz can), cut into 1/4-inch cubes2 cups
  • Unsweetened soymilk or cold water4 cups (to taste)
  • Ice cubesas needed
  • Cold water (for syrup)1/2 cup
Instructions
  1. 1Bring the water, dark brown sugar, and pandan leaf to a boil over medium heat.
  2. 2Cook until thickened and large bubbles form, 8–10 minutes.
  3. 3Transfer to a bowl.
  4. 4Cool to room temperature (about 20 minutes).
  5. 5Divide the cubed grass jelly among four tall 18-oz glasses.
  6. 6Add about 2 tablespoons of the brown sugar syrup to each glass.
  7. 7Gently mix.
  8. 8Top each glass with about 1 cup soymilk (or cold water).
  9. 9Add about 1/2 cup ice to each glass.
  10. 10Stir.
  11. 11Adjust with more syrup or soymilk to taste.
