Ingredients
- Dark brown sugar1 cup
- Pandan leaf, tied into a knot1 leaf
- Grass jelly (about one 19-oz can), cut into 1/4-inch cubes2 cups
- Unsweetened soymilk or cold water4 cups (to taste)
- Ice cubesas needed
- Cold water (for syrup)1/2 cup
Instructions
- 1Bring the water, dark brown sugar, and pandan leaf to a boil over medium heat.
- 2Cook until thickened and large bubbles form, 8–10 minutes.
- 3Transfer to a bowl.
- 4Cool to room temperature (about 20 minutes).
- 5Divide the cubed grass jelly among four tall 18-oz glasses.
- 6Add about 2 tablespoons of the brown sugar syrup to each glass.
- 7Gently mix.
- 8Top each glass with about 1 cup soymilk (or cold water).
- 9Add about 1/2 cup ice to each glass.
- 10Stir.
- 11Adjust with more syrup or soymilk to taste.
