Ingredients
- Black mustard seeds1 tsp
- Coriander seeds1 tsp
- Cumin seeds1 tsp
- Plain full‑fat yogurt, strained overnight2½ cups
- Fresh mint leaves, packed¾ cup
- Fresh cilantro leaves, packed¼ cup
- Black salt1½ tsp
- Ground ginger½ tsp
- Ground white pepper½ tsp
- Fresh green Thai chile, stemmed1
- Cold water1 cup
- Kosher saltto taste
Instructions
- 1Toast mustard, coriander, and cumin seeds in a dry skillet over medium-high heat until they begin to pop (about 3-4 minutes).
- 2Grind to a fine powder.
- 3Transfer to a blender.
- 4Add strained yogurt, mint, cilantro, black salt, ground ginger, white pepper, the green chile, and 1 cup cold water.
- 5Season to taste with kosher salt.
- 6Blend until extremely smooth.
