Ingredients
  • Black mustard seeds1 tsp
  • Coriander seeds1 tsp
  • Cumin seeds1 tsp
  • Plain full‑fat yogurt, strained overnight2½ cups
  • Fresh mint leaves, packed¾ cup
  • Fresh cilantro leaves, packed¼ cup
  • Black salt1½ tsp
  • Ground ginger½ tsp
  • Ground white pepper½ tsp
  • Fresh green Thai chile, stemmed1
  • Cold water1 cup
  • Kosher saltto taste
Instructions
  1. 1Toast mustard, coriander, and cumin seeds in a dry skillet over medium-high heat until they begin to pop (about 3-4 minutes).
  2. 2Grind to a fine powder.
  3. 3Transfer to a blender.
  4. 4Add strained yogurt, mint, cilantro, black salt, ground ginger, white pepper, the green chile, and 1 cup cold water.
  5. 5Season to taste with kosher salt.
  6. 6Blend until extremely smooth.
